GDHM 508 (3) Building Customer Loyalty

This course explores customer loyalty to a hospitality business through the development of an organizational culture of service excellence. Topics include customer and employee engagement; the co-creation of value, design, and consumption; and creating and engaging brand ambassadors. Customer relationship management in the hospitality management industry is also studied. (0:3:0)

GDHM 510 (3) Managing Hospitality Service Marketing

This course blends the key concepts of hospitality service marketing with the practical issues in delivering on an organization's market plan. Topics include designing and delivering on marketing and communication plans, creating and realigning brands, refining market segmenting, and selling hospitality products. (3:0:0)

GDHM 511 (3) Using Hospitality Financial Data

This course will be designed to ensure students are prepared to successfully engage in the analysis and use of financial data in decision-making. Topics include, creating and recording financial information, the accounting cycle, cash flows, balance sheets, and profit and loss statements. (3:0:0)

GDHM 512 (3) Managing an Accommodation Rooms Division

This course is an advanced study exploring the planning, organizing, controlling, and leading of the management of the rooms division of an accommodation business. The focus is on different business models found in this segment of the industry and how to effectively apply such strategies to drive operational success. (2:0:1)

GDHM 513 (3) Managing Destination Resorts

This course analyses some of the components needed for resorts to be successful. Resorts serve many different markets and play a significant role in the development and conservation of many destinations and lifestyles. Topics include resort design, resort destination structures, resort communities, tourism systems, and tourist lifestyle choices. (0:3:0)

GDHM 514 (3) Evaluating Financial Statements

This course prepares students to use financial analysis in the hospitality industry. Students analyze of financial information needed in making managerial decisions in the hospitality industry. Topics include analytical models of hospitality operations, forecasting, revenue maximizing and profit generating, cost controlling, and business valuation. (3:0:0)

GDHM 515 (3) Analyzing Operational Data

This course examines the functional service areas and procedures in hospitality businesses, and services in general, to learn how to best implement, measure, and assess key factors that lead to quality service and guest satisfaction. Key concepts include performance measures, service improvements, and strategic development of operations. (0:2:1)

GDHM 516 (3) Managing Hospitality Brands

This course examines a hospitality organization's brand and how a brand is managed through emerging and current media and digital technologies. A hospitality organization's brand promise is explained, and the process of alignment is discussed. Transaction effectiveness, engagement enhancement, and new media tactics are evaluated and applied. GDHM 517 (3) Leveraging Hospitality Market Research

This course focuses on various systems for gathering, recording, analyzing, and interpreting market data, which are used by decision makers in managing a hospitality business. Foundational principles and processes applied in hospitality market research are compiled. (0:1.5:1.5)

GDHM 518 (3) Visiting Professors Lecture Series

This course is an interactive lecture series delivered by invited professors of practice or visiting scholars, which focuses on current trends and future directions for the industry. Students will integrate the knowledge and information gained during these sessions into their learning through participation in panel discussions and post-session submissions. (0:6:0)

GDHM 519 (3) Designing Food and Beverage Operations

This course explores the design and management systems of a food and beverage operation. Using a market-based, a service-based, and an operations management approach, this course examines and applies the concepts and theories, through the use of case studies, simulations, and the Discovery Room on-campus restaurant. GDHM 521 (3) Managing Hospitality Revenue

This course introduces managing revenue from accommodations and food service businesses in order to maximize revenue. Key concepts are the integration and implementation of revenue management systems (RMS) with a property management system and measuring an operation's key performance indicators. This course uses student team-led simulations and case studies. (1.5:1.5:0)

GDHM 522 (3) Emerging Consumer Trends and Issues

This course examines internal and external motivators and determinants that influence the decision-making process of consumers of hospitality services and products. How hospitality managers use these influences on groups and individuals in satisfying their needs and wants, and in developing and delivering services and products, is the concentration of this course. GDHM 523 (3) Managing Business Events

This course explores the business models and business imperatives needed to successfully respond to the business event industry. Business events include conferences, congresses, meetings, trade and consumer shows, symposiums, and the like. Students in this course will evaluate business events and how they can attract, secure, retain, and service these events. (0:3:0)

GDHM 524 (3) Making Strategic Decisions

The course explores the processes of creating and implementing strategy decisions. It examines the process components--internal and external environmental scanning; forming strategic goals and tactics; strategic thinking; and implementing, planning, and controlling the strategic plan. This course uses student team-led simulations and case studies. (0:3:0)

GDHM 525 (3) Leading Culturally Diverse High-Performing Teams

This course explores the forces of globalization on the hospitality industry and business models, and what skills, knowledge, and attitudes are needed to effectively lead high-performing teams to achieve organizational success. This course examines the effects of cultural diversity in multi-national organizations, and the international dynamics within the hospitality industry. (0:3:0)

GDHM 526 (3) Integrating Professional and Personal Development

This course prepares GDHM students for meaningful participation in their graduate internship. Having successfully completed the coursework portion of the GDHM, graduates further enhance and polish their professional and employable knowledge, skills, and attitudes that will lead to their success in their graduate internship and beyond. GDHM 527 (3) Preparing for Graduate Consulting Project

This required course prepares students for the consulting project they will complete in GDHM 590. Working directly with an assigned faculty, the student will prepare and defend their integrated graduate project proposal. The completed proposal is presented to a defense panel comprised of faculty and industry practitioners. (0:3:0)

Prerequisite: Successful completion of all GDHM courses except GDHM 590.

GDHM 590 (9) Graduate Internship and Consulting Project

This is a GDHM capstone course. Students will participate in a Graduate Internship and fulfill their Integrated Graduate Project Proposal as outlined, defended, and approved in GDHM 527. This course is a combination of an internship experience in the hospitality industry with directed experiential learning in the integrated graduate project. (0:0:0 -525)

Prerequisite: Successful completion of 54 credits of GDHM courses, including GDHM 526 and 527.
